Happy National Coffee Day! Everyday to me is coffee day, I LOVE coffee. Coffee makes mornings better, kinda like wine makes nights better 😉
In honor of National Coffee Day and the new Fall season I’ve put together a creamy, yummy, filling smoothie recipe together for you. I made this smoothie for breakfast pretty much every day last week. It is soooo delicious and keeps you full until snack time. I am a total pumpkin girl. Pumpkin decor, pumpkin pie, pumpkin macaroons, pumpkin everything except for Starbucks Pumpkin Spice Latte. I may get hung for this but I do not like the oh so famous PSL. It’s way too sweet and is filled with crap (see image below).
Besides all the crap in a PSL, it also costs way too much money and has no nutritional benefit. So I came up with the genius idea of making my own variation which not only satisfies the pumpkin craving but also provides the caffeine I need in the morning and boost of protein, potassium, and fiber.
Pumpkin Coffee Smoothie
4 oz. cold coffee (I use Chameleon Cold-Brew)
4 oz. almond milk or non-dairy milk of choice
1 scoop of protein powder of choice (I like Perfect Fit Protein)
1 tbsp. pumpkin puree (more if you’d like)
1 tsp. pumpkin pie spice (Trader Joe’s has a good one)
1 tsp. cinnamon
1 tsp. vanilla extract
Squeeze of honey (optional)
Ice (or better yet use a frozen banana so that the ice doesn’t water it down)
Blend everything together and enjoy 🙂
