Mike’s Pineapple Slaw

Happy Sunday!! Hope everyone’s weekend has been lovely and that you’re enjoying the last month of summer.  I can’t believe tomorrow is already the last day of August, seriously where has the time gone?!?  Last night we had a couple of friends over for dinner and they asked if we could please make Mike’s Pineapple Slaw.  My fiance makes the best slaw that is not only good on its own but makes a great addition to tacos, tostadas, carne asada, etc.  I’ll have him make a big batch of it on Friday and I’ll eat it the next few days as a healthy lunch salad.  I asked if I could share his recipe and he kindly agreed 🙂

Mike’s Pineapple Slaw

10 oz. bag cole slaw or cabbage

1 1/2 cups fresh diced pineapple (you can also add mango and/or papaya)

1 cup diced red onion

3 diced green onions

1/4 cup diced jalapeno (more or less depending on how spicy you want it)

3/2 cup cilantro

9 oz. pineapple juice – not from concentrate! (Trader Joe’s has a 4 pack of pineapple juice in the drink section)

2 tbsp olive oil

1 tbsp rice vinegar

1 1/2 tsp toasted sesame oil

1/2 tsp ground red pepper

1/2 fresh squeezed lime

Dash of salt & pepper

Mix all ingredients in a large bowl.  Stir and cover.  Let sit in fridge for a minimum of 4 hours stirring occasionally.  Eat as a side salad or add to your favorite dish!  You can adjust the spicy level based on your liking.  Obviously if you’re serving it to children you’ll probably want to add less jalapeno or even substitute jalapeno for green bell peppers.

So simple, healthy and delicious!!  Last night we added it on top of pulled pork tostadas and topped with a little queso fresco (not so healthy).
