Better than Brats

I hope you all had a great weekend, I know I did! The concert on Saturday was AMAZING!! Jason Aldean and Kenny Chesney can serenade me anytime…swoon.  On Sunday my fiance and I went to the OC Fair which is always a good time.  They had the most adorable little piglets that I wanted to take home with me instead I settled on a $2 succulent.

While walking around the fair I was ambushed by the smell of BBQ, cotton candy, and fried everything.  It all smelled delicious but I know if I ate any of it I would regret it as soon as my stomach started reminding me why I don’t eat fair food (excluding the oh so delicious corn-on-the-cob).  While passing up food stand after food stand I came up with a genius idea for dinner, brats! But not your standard brats, a healthier version that would leave me feeling just as satisfied as the original.  I knew this was something the fiance would like as well, double score.  Eating healthy does not equal feeling deprived.  It’s all about finding healthier alternatives and coming up with new ways to create some of your old favorites.  This recipe swaps fatty pork sausage for leaner chicken sausage and no need for a bun when you get tons satisfying flavor from the sauteed vegetables and kraut.  Please excuse my lack of photography skills, I’m learning 🙂

Better than Brats – serves 4

1/2 sweet onion

1/2 red bell pepper

1/2 yellow bell pepper

1 teaspoon extra-virgin olive oil

1 lb. chicken sausage (lean preferably) – I use hot chicken sausage from the deli counter at Sprouts

sauerkraut – Farmhouse Culture organic kraut is delicious


Heat pan on medium-low heat.  Combine olive oil, onion, and peppers in the pan and toss well.  Sprinkle with a dash of salt & pepper for taste.  Cover with a lid and sweat veggies for 20 minutes, stirring occasionally.  While vegetables cook grill the sausage links for roughly 15 minutes turning halfway through.

Cut sausage and top with sautéed onions/peppers, sauerkraut, and condiments of choice (mustard for me).

You can enjoy this with a side salad or some grilled asparagus.  Enjoy!!
